Blueberry & Sour Cream Scones
Some people relate eating scones to something akin to sitting down to high tea with the Queen of England! But, really, they are simply dressed-up biscuits. :-)
So . . . put away your china, calm your fears & take a look at this yummy, simple recipe. You will find that it is so easy & your family will have something new to serve to company or to eat on Sunday mornings.
You will need:
2 c. flour (I use bread flour for more fluff)
1/3 c. sugar
1 ts. baking powder
1/4 ts. baking soda
1/2 ts. sea salt
1/2 c. VERY cold butter (or a non-hydrogenated margarine like Earth Balance)
1/2 c. sour cream
1 large egg
1 c. blueberries (fresh are best)
Non-stick cooking spray (ex: Pam or Crisco)
Directions:
1) preheat oven to 400*
2) in a medium bowl, mix your flour, sugar, baking powder, baking soda & salt
3) cut into chunks or grate the butter into the dry mixture you just made; then use your fingers to work through, it should look like a coarse meal
4) in a smaller bowl, whisk sour cream & egg til smooth. Using a fork, stir sour cream mixture into flour mixture until the dough forms large clumps
5) add blueberries; mix gently w/hands; when well mixed, form dough into a ball
6) place on a lightly floured surface, pat & form into a 7- 8" circle, about 3/4" thick
7) sprinkle w/1 ts. of sugar, cut into 8 triangles, place on a sprayed cookie sheet about 1 inch apart
8) bake 15~17 minutes; cool for 5 minutes & serve warm w/lots of homemade butter & maybe even a little jam or jelly :-P
Also good in this recipe is to add cream cheese to the mix, you can also sprinkle a little oatmeal or raw oats on top before baking.

I remember my first taste of a scone...I thought, why that's just a flavored biscuit...and a dry one at that...and by that I mean a southern breakfast biscuit..not a cookie/biscuit as the Brits call them...teehee!

ReplyDeleteI've never tried a scone, but these look good. I may have to give 'em a try :) Maybe I can figure out a way to make them gluten free for my food sensitive children :)
